Good Monday folks!
I hope you have had a great weekend, the weather around here was beautiful and it was just right for grilling.
Michelle and I have been talking about doing more veggies out side on the grill, and since all things taste better with a touch of fire that’s what we did. I decided that the grilled pork chops and baked sweet potatoes needed some Grilled Squash to round out the meal. It was simple and quick, and in keeping with me trying to eat healthy, it fit really well. I stopped by the local food distributor and picked up 6 medium to largish yellow straight necked squash for the task. There is really not much to do but wash then slice them and go for it.
Grilled Squash for Man Food Mondays
Ingredients
- 6 medium to large straight necked squash
- 2 Tbsp olive oil
- 1 tsp onion powder
- salt and fresh cracked black pepper to taste
Instructions
- Preheat the grill. If you are using charcoal, arrange for offset cooking by placing the coals on one side of the grill. If you are cooking on gas, start the burners on one side of the grill. You are going to place the squash on the side that has no direct heat.
- Wash and slice the stem and the end off the squash. Slice long ways, end to end, about 1/4 inch thick. Toss in the olive oil and lightly sprinkle the onion powder, salt and fresh cracked black pepper. Place the squash opposite the fire so that it cooks indirectly, after 4 minutes flip the squash and cook for another 5 minutes. Move over the flames/coals for about 2 minutes each side for grill marks. Serve immediately.

So that’s about it. very quick and tasty. I like grilling vegetables so we will see more of that as the summer moves on.
