Somehow making something special to eat for Earth Day has escaped me this year. And, I will be at work all day today, so there won’t be time to make something. What I did this weekend though, was definitely a celebration of the earth. I worked in my herb garden. I cut back things that were overgrown, weeded, and even planted a few new plants. We have had two very mild winters, so I have quite a few plants that made it through the winter and are already beautiful. Tonight, we will be eating meatless to celebrate, but that will have to be another post on another day. Happy Earth Day!
