This past weekend we were getting together with friends, and I knew that I wanted to take something to share. So, you are probably going to think this is really weird, but I dreamt that I should take fruit and my Grandmother’s Poppy Seed Dressing. So, the next morning I got up and got out her little recipe book and looked at her recipe… wow, 2 cups of vegetable oil and 1 1/2 cups of sugar!!! So, I decided to lighten it up a bit. Now don’t get me wrong, her recipe is wonderful and a bit thicker than mine, but we have been trying to eat healthier, and I just couldn’t bring myself to make the full fat, full sugar version.
The original recipe also called for onion juice, which I do remember buying for this recipe in the past, but could not find this time, so I substituted onion powder. I also made some adjustments to some of the other amounts, and honestly it tastes just like I remember it even with all the differences!
Homemade Poppy Seed Dressing – A Lightened Up Version of My Grandmother’s Recipe
Ingredients
- 3/4 cup sugar
- 2/3 white vinegar
- 1 teaspoon onion powder
- 2 teaspoons dry mustard
- 1 teaspoon salt
- 2/3 cup light olive oil
- 1 tablespoon poppy seeds
Instructions
- Stir together sugar, vinegar, onion powder, mustard, and salt.
- Place in the bowl of a food processor or blender.
- Turn processor or blender on high and slowly drizzle in oil while it processes through the hole in the top.
- Stir in poppy seeds.
- Serve with fruit or spinach salad
