Smoked Pork Spare Ribs with Blackberry Citronge Glaze






  1. In a 2 qt sauce pan put the blackberries and the chicken broth. Bring to a boil and reduce the heat simmer for 5 to 8 minutes. Using a potato masher crush the blackberries until they are mush and fully blended in the chicken broth. Pour the mixture into a bowl through fine mesh strainer to separate the seeds and solids out of the liquid return the liquid to the sauce pan. Add remaining ingredients and stir well bring to a slow boil and reduce heat to low. Simmer the glaze/BBQ sauce for about 2 hours stirring frequently to reduce the liquid and thickening the sauce. Adjust the taste by adding in the salt and pepper.
