This spicy shrimp and peach coleslaw mad the perfect dinner last week. It was just so summery and had wonderfully delicious flavors. I had been planning a peach coleslaw for a while and these shrimp were the perfect accompaniment. The flavors are a little tropical and a little Asian. And, to make it even better, it really is quick and easy. I hope you enjoy it as much as we did.
Spicy Shrimp with Peach Coleslaw

Ingredients
Coleslaw
- 6 cup cups cabbage, chopped
- 2 peaches, chopped
- 1 Tbsp. lemon juice
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1/2 cup cilantro, chopped
- 2 Tbsps. sweet chili sauce
- salt and pepper to taste
Shrimp
- 1 Tbsp. olive oil
- 1 pound medium shrimp, peeled and deviened
- 1 Tbsp. lemongrass, finely chopped
- 2 Tbsps. sweet chili sauce
- 1 1/2 tsps. sriracha
- 1/2 cup cilantro, chopped
- 1/4 tsp. paprika
- salt to taste
Instructions
Coleslaw
- Toss peaches with lemon juice to prevent browning.
- Stir together all ingredients and refrigerate.
Shrimp
- Stir together sweet chili sauce, sriracha, and paprika.
- Saute shrimp and lemongrass in olive oil just until done, being careful not to overcook the shrimp.
- Stir in chili sauce mixture, and cook until well heated.
- Season with salt to taste and stir in cilantro just before serving.

Oh my! I’ve never had or even IMAGINED peach coleslaw before, and now, I’ve gotta try it! This sounds delicious and like a healthy and summery twist on a regular coleslaw. And those shrimp… yum!
