Spinach and Mushroom Enchiladas



  1. Preheat oven to 350 degrees.
  2. Heat oil in a large skillet. Saute spinach, mushrooms, and garlic until tender.
  3. Stir together salsa verde and sour cream.
  4. Spread a little in the bottom of a glass baking dish.
  5. Put 1/8 of mixture inside a tortilla and top with a little cheese. Roll up and place seam side down in the baking dish.
  6. Pour remaining sour cream mixture over the top.
  7. Sprinkle with remaining cheese.
  8. Bake 20 to 30 minutes or until bubbly and some of the cheese is starting to brown.
  9. Serve with cilantro if desired.
