Tomorrow, you are going to be getting a post from Steve about his Jerk Chicken. Well, this Yellow Rice is one of the things we had to go with it. Before this recipe, I had never had yellow rice made with brown rice, but we are trying to keep our grains whole grains, so I used brown, and it was really delicious!
This rice is made with turmeric. I know a lot of yellow rice recipes are made with saffron, but that was not available at our rural grocery store. And, while I am not too far from a grocery store that probably would have saffron, I like to keep as many of my recipes as possible to ingredients I can find locally. That way, I know I am probably not asking you to travel and locate hard to find ingredients.
This Yellow Rice is super easy and delicious, and you are getting a side dish that is a bit more special than plain rice or potatoes.

Ingredients
- 1 1/2 cups brown rice (not instant)
- 2 1/4 cups water
- 1/2 teaspoon turmeric
- 1 teaspoon salt
- 2 clove garlic, minced
- 1 red bell pepper, chopped
- 2 tablespoons olive oil
Instructions
- Place all ingredients in a large saucepan.
- Bring to a boil.
- Reduce heat to low to simmer and cover.
- Cook for 40-50 minutes or until rice is tender.
